Pam's Chicken and Apple Salad
Marinate boneless skinless breasts of one chicken overnight in:
Olive oil
Grated ginger
Finely chopped garlic
Hot sauce (like Tobasco)
Pan fry or BBQ and cut into half-inch cubes.
Add:
1 apple peeled and chopped (can substitute pineapple chunks)
2 green onions minced
1 handful raisins soaked overnight to soften
2 stalks diced shaved celery
1 small zuccinni - peeled and chopped
Dressing:
1 small clove garlic - pressed
1 tsp grated ginger
Hot sauce (don't hold back)
Juice of half a lemon
Apple cider vinegar (1 or 2 tbsp?)
1+ tbsp honey
1 heaping tsp Dijon mustard
Whip in olive oil to taste
Marinate for at least four hours before serving.
