Jenny's I Feel Warm All Over Fancy Beef Stew
2 cups chopped celery
2 cups chopped carrots (or more if desired)
1 1/2 lbs stewing meat
1 medium onion, chopped
2 cloves diced garlic
7 plum tomatoes
1/2 cup water
salt/pepper
1 tsp basil
2 zucchinis, chopped
1. simmer onion, celery, carrot and garlic over low heat in pot for 10 mins.
2. add meat, and salt and pepper to taste, and cook stirring constantly for 5 mins.
3. blanch, skin and seed plum tomatoes, saving as much of the juice as possible.
4. add all other ingredients, EXCEPT the zucchini and cook for 45 mins.
5. add zucchini and cook for about 10 more minutes.
