Jenny's Version of Lucy's Beef Stew
2 lbs beef
1 bunch of carrots, chopped
1 red onion, chopped
3 tomatoes, chopped
4 garlic cloves, chopped
2 tsps salt
1/4 tsp pepper
1/2 tsp dried thyme
1. Dump all ingredients in pot.
2. Fill pot until ingredients are barely covered with water.
3. Simmer for about 2 hours with lid ajar.
