Carol's Chicken Marbella

2- 1/2 pounds chicken pieces
1 head of garlic pureed in oil
1/4 cup oregano
coarse salt & pepper
1/2 cup red wine vinegar
1/2 cup olive oil
1/2 cup Spanish green olives, no stuffing
1 cup pitted prunes
1/2 cup capers and juice
1/4 cup Italian parsley
6 bay leaves
3/4 - 1 cup honey
Mix ingredients with honey and marinate overnight. Bake chicken together with marinade uncovered 1 -1/2 hours at 350 basting with juices.
Tip: The gravy has lots of fat. Pour it into a separate container and refrigerate or freeze so fat separates and can be skimmed.
