Karin's Prune Chicken Dish

16 -24 boneless, skinless chicken thighs
Mix together:
1 tablespoon dried oregano
3/4 cup white wine vinegar
1/2 cup olive oil
1/4 cup capers
1/2 cup kalamata olives
3/4 cup pitted prunes (can be omitted)
1 or 2 cloves finely chopped garlic
optional: 2 Tablespoons of honey

Arrange the rolled chicken thighs in a baking dish. Pour mixed ingredients over thighs.
Marinate all the ingredients in fridge for 1 hour or more.
Bake at 350 uncovered for 30 - 60 minutes until the thighs are no longer pink.
Serve with spaghetti squash or just by itself.
