Karin's Betcha Can't Eat Just One Lemon Squares

Crust:

2 cups almond flour
1/8 cup honey
1/2 cup or 1 stick of cold butter

Topping:

3 eggs
1/2 cup or 1 stick butter - melted
1/2 cup honey
1/2 cup fresh lemon juice
1 tsp. lemon rind

1. In a food processor, mix the flour, honey, and cut up pieces of butter, until just mealy.
2. Press into the bottom of an 8X8 pyrex pan and bake at 350 for 12- 15 minutes. Cool slightly.
3. In blender, mix all ingredients for the topping for about 45 seconds only.
4. Pour over pastry.
5. Bake at 350F for about 20-25 minutes.
6. Do not brown the top. When cool, place in freezer.
7. Put out for a few minutes at room temperature and cut into squares or fingers.

You can eat them right out of the freezer.
