Karin's Apricot Chews
1 cup chopped dried apricots
1 cup coconut
1/4 cup honey
2 eggs unbeaten
2/3 cup almond flour
1/2 tsp. baking soda
1/4 tsp. salt
Combine first four ingredients.
Add the rest of the ingredients and mix well.
Bake in a greased 8X8 " pyrex pan at 350 for about 20 minutes.
When cooled, cut into squares or fingers.
