Carol's Peanut Butter Swirl Brownies

1 cup SCD peanut butter
1/2 cup honey
1/3 teaspoon of baking soda
2 eggs

1. Preheat oven to 300-325F. Beat eggs , honey and baking soda , then add peanut butter.

2. Put 2/3 of the brownie mixture in a greased 8 inch pan. Smooth the top.

3. Drop the remaining batter in large tablepoons over the top of batter in the pan.

4. Do not smooth out.

Batter for "Swirls"

1/3 C peanut butter
1/4 C well dripped yogurt
1&1/2 - 2 Tbsp honey
1 Large egg white

1. In a seperate bowl beat peanut butter with dripped yogurt until smooth. Beat in the honey. Then beat in the egg white.

2. Drop swirl batter in large tablespoons between the brownie batter. Do not smooth out.

3. Pull the tip of a knife through the batter to make the swirls. Continue to do this until the batter is fairly level on the top.

4. Bake 25-30 minutes or until the centre appears set and the sides just start to pull away from the pan.

5. Cool brownies in pan on a rack before cutting into squares.

The UCLBS is, however, an independent group of Ontarians who are following the Specific Carbohydrate Diet to treat inflammatory/irritable bowel problems, and does not represent therapy recommendations of the clinic.
