T's Lamb Marinade
For eight lamb chops:
Juice of one lemon
1/2 tsp kosher salf
1/2 finely ground black or white pepper
1 tbsp dry mustard powder or legal dijon mustard (President's
Choice is legal)
2 tbsp dried oregano, powdered between your palms
1 clove crushed garlic
Place lamb chops in a plastic bag. Add marinade ingredients. Seal the bag and shake, making sure lamb is completely coated. Let sit for one hour. Chops can be BBQ'd, grilled, or broiled.
The lemon juice, garlic, and mustard all act as natural tenderizers.
