Karin's Mango Salsa
Mix together:
1 or 2 ripe mango, peeled and diced
1/4 cup finely chopped red onion
1/2 sweet pepper, finely chopped
juice of one small lemon or lime
1/4 tsp. cumin (or more to taste)
2 Tbsp. fresh parsley, chopped
(optional - chopped mint)
Refrigerate overnight.
Excellent with grilled chicken or fish.
